I think next time I'll use more Liquid Smoke. It tasted fine in the mixture but after it finished cooking and the rice was added the taste wasn't there how I wanted it but it's still good.

30 Day Challenge Update

My bank account got screwed up so wasn't able to do the challenge as originally planned. But did stick to it as much as possible.

I wasn't able to grocery shop properly so used what I had on hand. So had some Chickpea Cutlets for my main meals and the last few days before the next payday made some mac and cheese.

But other things I can tell is changing. I have a small amount of sugar left so for the coffee I have and tea I haven't added any and am fine without any sugar. This last trip to the store no desire to get any my sweet tooth may finally be under control :).

For this week so far I've made Red Beans and Rice and Moroccan Couscous :)

30 Day Whole Food Challenge

A friend of mine Lindsay of Happy Herbivore put out a 30 Day Whole Food Challenge. It's not *quite* raw but same idea. Keep as close to it's original source as possible, if using canned items no more than 1 ingredient and nothing processed (by a company). There is room for some slight adjustments such as allowing for small amounts of sweeteners if one is eating oatmeal or have to have that coffee in the morning :).

The goal is not to make it difficult but to allow for success in the challenge.

We're going to be starting May 1st so it'll be a fun challenge!

I'll be making good use of Dino's book for this challenge :). I've been wanting to make more things from his book and this will be perfect :).

I also hope this helps my sweet tooth! I think I have some recipes that would qualify to make a dessert from but have to double check.

Can't wait to get started :)

Stuffed Manicotti

I found this recipe in a magazine that I had saved. It was my first time stuffing Manicotti so there definitely was some trial and error :). I sprinkled it with some Nutritional Yeast and Salsa :).

The recipe consisted pretty much of spinach and tofu and while the stuffing of the Manicotti was challenging sometimes it was easy to put together :).
